Hemp Seed Crusted Halibut

with warm Potato Salad & Lemon Caper Hemp Oil Vinaigrette


Ingredients:  Halibut Filet (5 oz portion)
                      Naturally Splendid Shelled Hemp Seed
                      Nugget Potatoes
                      Green Beans
                      Tomatoes

Directions (fish): Heat skillet over medium heat and add 2 tbs of olive oil, crust one side of the fish
with hemp seed and season w/salt. Add the crusted side of the fish into the skillet and sear until the
crust appears golden brown. Then turn the fish over and bake at 350º in the oven for
5 minutes. (cooking time of the fish may vary depending on the thickness of the fish)

Directions (potatoes & vegetables): Cut nugget potatoes into desired shapes. Boil potatoes until
cooked throughly. Next blanch green beans in boiling water for approximately 3 minutes,
or until soft. Next cut tomatoes into desired size and mix w/potatoes and green beans.
Last toss the salad w/Lemon Caper and Hemp Oil Dressing.



Lemon Caper & Hemp Oil Vinaigrette

Ingredients:  Part A
                       1/4 cup of capers
                       3 tbs of lemon juice
                       1 tbs of dijon mustard

                       Part B
                       1/2 cup Naturally Splendid Hemp Oil

Directions: In a blender, blend all ingredients in part A then emulsify w/part B(Hemp Oil).
Toss warm potatoes and green beans in vinaigrette. You may garnish the salad w/fresh capers.
