HEMP CARROT & CHICKPEA PATTIES
(PREPARATION TIME- 25 MIN, SERVES 4) 12 oz (350g) carrots 1 clove garlic 15 oz can of chick peas 4 tbsp premium shelled hemp seed 1 large bunch cilantro 1 1/2 tsp ground cumin 1 1/2 tsp ground coriander 1 large egg 2 tbsp all purpose flour frying oil Grate carrots coarsely and set aside. Peel & chop garlic roughly Chop cilantro to make 6 tablespoons Drain and rinse chick peas Put chick peas, garlic, cilantro, cumin, and coriander into a food processor and process to a rough paste. Add carrot, egg, and flour and process until mixed, but still chunky. Heat oil in a frying pan Split mixture into 8 patties Fry for 2-3 minutes on each side, until golden brown. Drain on paper towels & serve. Serving suggestions: These patties are great served on a burger bun with a side salad. Also great made in advance and heated later as a healthy snack.
