A nice dip for fresh cut vegetables or serve with pita bread or breadsticks.
(preparation time- 10 min, cooking time- N/A, serves 6-8)
1 Cucumber
1 1/4 cups natural greek yogurt
1 tbsp hemp oil
2 cloves garlic, crushed
2 tbsp chopped fresh mint
sea salt & freshly ground pepper
Cut cucumber in half, remove seeds, and finely chop.
Place cucumber in bowl, add the yogurt and hemp oil, mix well
Add garlic and chopped mint... mix well.
Season to taste with salt & pepper
Cover and chill until ready to serve
SERVE CHILLED
KEEP REFRIGERATED UNTIL USE
USE WITHIN 3 DAYS
